My theory on why it works is that you stay glycogen depleted throughout the day when you're active, forcing you to burn fat for energy. If you don't restrict the carbs during the day I can't see this working. Your refeed in the evening means your glycogen stores are full during the rebuilding period of sleep. In some ways it's seems similar to the way hunter gatherers work. They hunt while hungry, eat after and then sleep.

I feel like no matter when I eat carbs, it always makes me feel bloated the next day. Maybe my body just isn't used to them? I try to only eat carbs a few times a week because of that.

Are you sure it's all carbs? You may be allergic to something. Try introducing one at a time and see if it makes a difference.
